Phone Keyboard Layout is the default, with 123 on the first row. Or choose Calculator Keyboard Layout, with 789 on the top row.

On iPhone choose the layout by tapping Settings on the main screen.
On Apple Watch press-and-hold on the keyboard screen to access layout settings.
