The only difference between each mode is that you start off with less hearts . You should keep the easy mode with smaller numbers to remember and for harder levels increase the numbers that need to be memorized . It would also be nice if you kept the current game mode that you have but put it as alternate game mode for people that like the increments in difficulty that you currently have .
