Missing some foods, such as Kale, Chard, Avocado etc. I am still new at it so will review again.

Almost all of the definitions of the words are so obvious like chop, bread, broil?? I mean gimmie a break. What cook has no clue what these things are??? There should be a LOT more words or techniques in there that cooks are unfamiliar with.

Always thought I knew what the terminology in certain recipes meant, but now I know longer have to guess.

Very helpful! I use the substitutions quite often and they always work out well. I only wish that there were more things listed for substitutions! :)
